In the context of ritualized feast-day making, Nicholas is frequently accompanied by a helper spirit, typically a Pagan or demonic figure like krampus, ruprecht or black pete. While Nicholas - or someone dressed as him - rewards well-behaved children, the helper spirit - or someone dressed as that guise - punished the unruly under the direction of Saint Nick.
Ritual: Saint Nickolas is a gift gaver but he does not dress like Santa Claus. He appears dressed as a bishop and there is nothing secular about him. Saint Nicholas does not visit homes at midnight. Instead, men impersonating him knock on the door in broad daylight accompanied by assistans and attendants. These representatives ask children to account for their behavior and may ask religious questions and make religious speeches.

A Legend of Lapu-lapu
Mactan Island
This is the story of Lapulapu and his rivals and enemies battling at Mactan.
“A favorite legend about Lapulapu among rural folk on Mactan Island tells of the hero's love for Princess Bulakna. She was the lovely daughter of Rajah Kusgano, king of Ulangga Island near Mactan. Lapulapu had several rivals. Bitadlok was Lapulapu's most aggressive rival. Like Lapulapu, Bitadlok was noted far and wide for his great courage and prowess.
It was a time-honored custom among the pre-Spanish Filipinos that a young blade should win a woman's hand not only with sweet nothings but with a display of courage and prowess in a duel with his rival.
So it was ceremoniously announced to all and sundry in the island kingdom of Ulangga by the village criers of Rajah Kusgano that on a certain day after the dapdap trees had flowered, Lapulapu and Bitadlok would fight it out for the hand and heart of his beauteous daughter and heiress, Bulakna.
Lapulapu's other rivals, apparently believing that discretion was the better part of valor, had decided against participating in the contest. Many people, coming from as far as Bohol and Leyte, journeyed to Ulangga Island in their outriggers to witness "the battle of the century." Even the rajahs and lakans of Butuan and Sikijod (Siquijor) eagerly came to Ulangga to see Lapulapu in action. They also came to see and admire the well-known beauty of Bulakna.
But shortly before the eagerly-awaited joust, word came to Lapulapu, the ruler of Mactan, that to Cebu - the kingdom of Rajah Humabon - had come “white people'' whom his Cebuano adversary welcomed and befriended. And to add insult to injury, another of Lapulapu’s arch-enemies, Zula, came from Humabon to demand tribute for Magellan in the name of the King of Spain. Lapulapu’s blood boiled. He turned down the demand for tribute and challenged the "intruders" to physical combat.
The bloody battle of Mactan followed, resulting in the defeat of the Spaniards and the death of their brave leader, Magellan. Bitadlok sided with Lapulapu and was in the thick of the fight—to impress Bulakna and her father. Lapulapu did not know about his rival's gallantry until much later. "But Magellan immediately killed him with the same bamboo spear which the latter had hurled mightily at the captain, leaving the deadly lance in the Indian's body,” Pigafetta wrote in his account of the battle of Mactan. The "Indian" was Bitadlok.
When he saw that Magellan had killed his rival, Lapulapu was furious. He rushed toward the wounded Magellan and finished him off with a pestle. Incidentally, before Pearl Harbor, the people of Mactan erected an awe-inspiring monument to Lapulapu at the Open City park, showing the Malayan warrior holding a pestle.
After the bloody encounter with the Spaniard, the legend concludes, the inhabitants of Mactan Ulangga, Santa Rosa, and other neighboring islands, held a double celebration: Magellan's defeat and death, and the royal wedding of Lapulapu and Bulakna in the richly-decorated panting or palace of Rajah Kusgano.”

Initially, it was books that led Fernando Rodriguez Delgado to his interest in cacao. Today Rodriguez runs Chocolate Macondo, a café that specializes in ancient preparations of cacao, but prior to that he was a bookseller, fanatical about reading and fascinated by the history of Mexico.
The day that he came across the Florentine Codex, a 16th-century manuscript documenting Mesoamerican culture, was an important one: it would eventually spark his countrywide search to discover the traditions of cacao and seek out ingredients, the names of which he only knew in Nahuatl. Rodriguez didn’t speak this native language of Mexico, so trying to work out the recipes for cacao drinks he found in the codex was no easy task.
“They put mecaxochitl [in the cacao drink],” Rodriguez told us during a recent visit to his café. “But what is mecaxochitl?” he added with a laugh.
Rodriguez’s kind face revealed a little glint in his eye as he remembered his multilingual search for ingredients for a cacao drink referred to as atlaquetzalli, or “precious water,” in the ancient codex.
“We dedicated ourselves to finding the recipe. We thought it was unique,” continued Rodriguez.

It turned out, however, that all of the different cacao drinks infused with any combination of herbs, fruits and spices were referred to by the common name of atlaquetzalli in the Florentine Codex, regardless of the extra ingredients added to the cacao water. The codex was an ethnographic study written by the Spanish Franciscan friar Bernardino de Sahagún. The study, which was conducted in partnership with his indigenous students, documents the cosmology, rituals and way of life of the Mexica people. While written with the motive of converting the indigenous Mexicans to Catholicism, it is now an important document for understanding how native Mexicans lived and saw the world before the conquest worked to remove many of the ancient traditions.
As we sat in the Chocolate Macondo café, sipping on warm cacao drinks infused with hoja santa (a fragrant herb), pepper and chiles, we were just a five-minute drive away from the ancient city of Teotihuacan, revered by the Mexica people as the Birthplace of the Gods.
The proximity of the mighty Pyramid of the Sun and Moon to this café full of books about ancient Mexico, traditional clay chocolate pots and volcanic rock grinding stones, made every sip of our spicy cacao drink feel like a connection to Mexico’s past.
“We feel that our work is to restore and reconnect to the use of cacao here in the Central Mexican Plateau,” explained Rodriguez, whose interest in cacao took him across Mexico to discover more about how the ingredient was being used countrywide.
His travels led him to the discovery that in Southern Mexico cacao was consumed in traditional Mesoamerican ways (grinding down pure cacao beans and mixing it with water), while in central Mexico, the heartland of the Mexica and the area that took the biggest brunt of the Spanish conquest, the traditions had been lost and replaced with “European customs,” such as combining cacao or even cocoa solids with milk and chocolate bars that barely contained any cacao.
So, deciding to do his part in restoring these traditions, he bought a cacao grinder. Rodriguez would grind the cacao beans for a while and then the grinder would get stuck. He would leave it for a few days before trying again, but the same would happen. This went on for a year until one day it suddenly worked, and he was inspired to play his part in reintroducing traditional cacao products to Central Mexico. The cacao grinder has continued to grind the cacao – which comes from the jungles of Chiapas – into powder to this day.
Initially, Rodriguez worked with his brother, who is an herbalist, making bars of chocolate with different herbs and spices. However, realizing that they couldn’t compete with the big-name chocolate makers, they turned their hand to something more unique: the “precious water.”
Now, some eight years since making their first cacao drinks, the family has traveled around the country sharing these traditional Mesoamerican spiced cacao concoctions at festivals and fairs. Alongside the drinks, they often offer performances of traditional Mexica music and dance. For Rodriguez, “there is a historical, cultural and scientific reason” for their work.

Chocolate Macondo has made packs of their different chocolate drinks, which are for sale in powder form. If a customer falls in love with Chocolate Macondo’s special creations such as the warming Quetzalpapalotl drink infused with ginger, rosemary and cinnamon or the uplifting Tlexochitl with damiana flowers and mint, they can buy the ready-made formula to recreate it at home.
The café in which we sat has been open for two years, and according to Arjelia Rodriguez Rojas, Fernando’s daughter, they have had visitors from all over the world, “even some who left comments in Arabic and other languages,” in the visitor book that sits open, full of glowing reviews.
The café sells vegetarian tamales too, made by a chef in Mexico City. Rodriguez’s research led him to discover that across many parts of the country, cacao and corn were often consumed together.
“So, it made sense to sell tamales,” he said.
And the combination of the cacao drinks with the tamales does indeed work incredibly well, especially on the cool, cloudy morning that we sat in the cozy café.
Chocolate Macondo is very much a family business. Rather than industrialize and expand, they have preferred to continue making their chocolate drinks and products by hand. They are, however, looking to start making beauty products, like shampoos and soaps made from a base of cacao, and they are also planning to expand by opening up more cafés.
In keeping with their desire to contribute to culture, the family also offers a Pulque and Cacao tour for those interested in sampling another of Mexico’s Mesoamerican tipples. The tour starts at the café where participants learn about cacao and try the different drinks, discovering the herbal creations of Chocolate Macondo. Next, they will head to the fields nearby where agave is grown and harvested to make pulque. For those who want a more spiritual option, the pulque section of the tour can be replaced with a trip to a local temazcal (Mesoamerican sweat lodge) to partake in a ritual ceremony with a local shaman.

Revolución agrícola y sus implicaciones en la interpretación del desarrollo cultural mesoamericano
La agricultura ha sido ampliamente estudiada por su impacto en el desarrollo de la civilización, al grado de que autores como Gordon Childe la han calificado como una auténtica revolución.
El desarrollo de la agricultura se puede identificar mediante diversos indicadores, ya sea directos o indirectos. Childe nos hablaba acerca del crecimiento demográfico que supondría el acceso a fuentes relativamente estables de alimento, por lo que un incremento en el número de restos humanos encontrados es de utilidad para localizar grupos humanos que comenzaron a domesticar plantas.
Otro indicio está en las osamentas, ya que las primeras producciones agrícolas no eran suficientes para cubrir los requerimientos alimentarios de una población creciente, mientras que el abandono del nomadismo se refleja en un cambio en el desgaste de las extremidades inferiores.
El empleo de tecnología agrícola es un indicador que nos permite rastrear el avance de esta revolución. Los implementos para la molienda del grano, así como las herramientas para la siembra y cosecha resultan de interés.
Cabe señalar que la transición del nomadismo al sedentarismo no se dió de manera automática cuando se comenzó a desarrollar la agricultura, sino que hubo momentos en que la caza y la recolección coexistían con esta disciplina incipiente. También se presentaron formas alternativas como la agricultura de azada, donde el cuidado y abono de la tierra eran mínimos y compatibles con una vida nómada.
La domesticación misma de plantas es un proceso, que mediante la selección y cruza de las mejores variedades, el cuidado de los cultivos contra plagas y animales, así como el abono e irrigación, permitió que los especímenes se desarrollarán mucho mejor que en estado salvaje, resultando más benéficas para el consumo humano.
Debido a lo anterior, el estudio de los restos vegetales resulta de gran utilidad para elaborar un modelo del desarrollo de la agricultura. Se han identificado algunos ancestros de las especies vegetales más comunes en nuestros platos, como el teosinte, antepasado del maíz que consumimos actualmente y cuya evolución se aceleró gracias a su domesticación.
Los estudios han permitido identificar los inicios de la agricultura en Mesoamérica aproximadamente a finales del Pleistoceno y principios del Holoceno, alrededor del 10000 a. C. , gracias al hallazgo de polen de chile, teosinte y cacao, así como morteros. Esto sentó las bases para el comienzo del proceso de sedentarización y creación de centros urbanos, que se concretaría hasta varios milenios después, cerca del 1500 a.C.
Sitios como la Cueva de Santa Marta, en Chiapas, México, resultan de interés por ser los hallazgos más antiguos de estos elementos. El lugar como tal no daría lugar a una gran urbe, pero fue de importancia durante el período de transición entre la vida nómada y la sedentaria.
Cabe resaltar que entre las primeras especies vegetales encontradas están aquellas que poseen un efecto estimulante del sistema nervioso, tales como el chile, el cacao y la damiana. Esta última es utilizada como afrodisíaco en la medicina tradicional herbolaria. La presencia de plantas estimulantes es menor que en otras regiones, como Sudamérica.
El comercio es otro de los beneficiarios de la revolución agrícola. No sólo se exportaba el excedente de la producción por una variedad de bienes, sino que, en tiempos de guerra, una manera de cerrar alianzas era mediante el intercambio, resultando en un mayor desarrollo económico y cultural para la región. Ello se puede identificar en restos de herramientas elaboradas con materiales que no son autóctonos.
Mesoamérica consistía en un mosaico de culturas, con ciertos elementos comunes que las relacionaban. El estudio de la agricultura nos permite conocer las redes de intercambio e influencia que existían mucho antes de las grandes ciudades del Clásico. Es una muestra de que tanto la migración como el comercio han estado moldeando la cosmovisión y la cosmogonía de los habitantes de la región desde hace milenios.

The VegaFina brand was established in 1998 and has since become one of the world’s best-selling and-made cigar brands. It takes its name from “Vegas Finas” which literally translates as “finest fields”.
The VegaFina Classic, or “White Line”, feature a luxurious, hand-selected Ecuadorian Connecticut Shade wrapper, which is golden-brown colour with a mild taste profile, and a flavourful combination of Dominican, Colombian and Honduran long filler tobaccos with an Indonesian binder. There is also a Corona, Short Robusto and Robusto in this range.
The VegaFina Classic Perla Cigar is characterised by a mild style with creamy notes, a nutty aftertaste, hints of pepper balanced against cedar, almond and coffee notes. Toasty, woody, dry finish.
Supplied from our humidor, each cigar is presented in a cellophane wrapper for freshness and protection.
